It’s super cold here and has been raining cats and dogs for forever it seems. We were in need of some comfort food, and I found this recipe for Slow Cooker BBQ Beef and it sounded like the perfect solution. Roast with a twist and so versatile as you can serve it so many different ways. We put this on Hawaiian Rolls and served with sweet potato fries. For the leftovers, Adam made BBQ Beef tacos and he said they were amazing. The flavor of this is so rich and savory and comfort in every bite. You can serve this like roast and do a side of roasted or mashed potatoes and green beans or over rice, the possibilities are endless! I love it because it was so easy! It took minutes to prep and minutes to shred after it was cooked.
Slow Cooker BBQ Beef

Ingredients:
2.5 to 3 lb. boneless beef chuck roast
1/2 tbsp. dried minced onion
18 oz. bbq sauce (recommend Sweet Baby Rays)
1/4 cup balsamic vinegar
1 tbsp. minced garlic
1/2 tsp. dried thyme or rosemary
dash liquid smoke
1/4 tsp. salt
1/8 tsp. freshly ground black pepper
Directions:
Spray a slow cooker with cooking spray. Add in beef and sprinkle with minced onion.
In a small bowl, add bbq sauce, balsamic, garlic, thyme, liquid smoke, salt & pepper and stir to incorporate. Pour evenly over beef. Cover and cook on low for 8 hours or low for 4 hours and high for 2 hours.
Once cooked, use two meat forks and shred/pull meet apart. Serve alone, over rice, on sandwiches, or in tacos.
