Bakery Style Chocolate Chip Muffins

One day this summer, my best friend’s children were over at my house and her son asked if I had any more chocolate chip muffins from the snack packs you can buy at the store. I told him we were out and he asked if we could make some. I immediately said sure, and began to set out the ingredients. These Bakery Style Chocolate Chip Muffins were out of this world! So light, fluffy and sweet and the kids all loved them!! What’s even better is that her son helped make them, he poured in all the ingredients and stirred everything together. He even helped scoop them, awesome for a 5 year old! I remade them again last week with my daughter and she loved helping too, so this is a great recipe to involve your kids in the kitchen. These muffins are great for breakfast, snack or even dessert!

Bakery Style Chocolate Chip Muffins

Makes approximately 12-15 muffins

Ingredients:
2 1/2 cups all purpose flour
1 tbsp. baking powder
1 tsp. baking soda
1/2 tsp. salt
1/2 cup unsalted butter, melted and cooled
1 cup granulated sugar
2 eggs
1 cup milk
1 tbsp. vanilla
1 1/2 cups mini chocolate chips

Directions:
Preheat oven to 425, spray a muffin tin liberally with cooking spray or use muffin liners, set aside.

In a large mixing bowl, add the flour, baking powder, baking soda, salt & chocolate chips. Whisk together, set aside.

In a medium sized bowl, add the melted butter, sugar, eggs, milk & vanilla. Whisk together to incorporate. Gradually add in the flour mixture and stir until just combined.

Using an large cookie or ice cream scoop, scoop the batter into the muffin tins, filling approximately 3/4 full.

Bake for approximately 5 minutes, then lower the oven temperature to 375 degrees and bake for an additional 12-15 minutes until tops are set and a toothpick inserted comes out clean. Let cool for approximately 5-10 minutes. Run a knife around the edges, pop out and enjoy! Store in an airtight container at room temperature.

Notes:
*For mini muffins bake for 10-12 minutes at 375 degrees
*I like to freeze muffins and pull out however many I need for that morning, microwave for 10-15 seconds for an easy breakfast!
