Mashed Sweet Potatoes

I’m always looking for some easy side dishes and one day I decided to make Mashed Sweet Potatoes instead of just eating them baked straight from the oven. These turned out incredible! It’s my new favorite side dish and it’s so easy. You can also make it ahead of time which makes it great for holidays or family gatherings too. They are so creamy with such great flavor, our kids love them too!

Mashed Sweet Potatoes
Serves approximately 6 (depending on serving size)

Ingredients:
2 large sweet potatoes
1/8 cup sour cream
1 tbsp butter
2 oz. 1/3 less fat cream cheese
1 1/2 tbsp. light brown sugar
1 1/4 tsp. cinnamon

Directions:
Preheat oven to 425 degrees. Line a rimmed baking sheet with aluminum foil. Wash sweet potatoes and wrap each in aluminum foil. Bake for 1 hour, using a pot holder press on the outside of the potato, if still too firm bake for additional 15 minutes.

Unwrap sweet potatoes from foil and allow to cool slightly until you can handle them.

Cut each sweet potato open and scoop out the flesh and place into a medium sized bowl. Use a large spoon or masher and mash sweet potatoes. Add in sour cream, butter, cream cheese, brown sugar, & cinnamon. Stir until all are melted and incorporated. Serve warm.

Can place in an airtight container and reheat prior to serving if you want to make ahead.

  1. Mashed sweet potatoes are lovely. I didn’t add sugar though as it tastes good as it is without the added sweetness. I did add some ground pepper to it too (for me, not the kids).
