How do you make a chocolate chip cookie any better? It’s hard to do but just add a little pumpkin and this elevates your cookies to incredible!! The perfect fall treat! These cookies are soft and chewy and not cakey at all. The pumpkin & chocolate combo is one of my favorites and starting to rival the pb & chocolate even!! What’s your favorite way to indulge in pumpkin?

Makes approximately 32 cookies
Ingredients:
1/2 cup (1 stick) unsalted butter, softened
1 cup light brown sugar, packed
1/4 cup granulated sugar
1 tsp. vanilla
5 tbsp. pure pumpkin puree
1 1/2 cups all purpose flour
1/2 tsp. salt
1/2 tsp. baking soda
1/2 tsp. ground cinnamon
3/4 tsp. pumpkin pie spice
1 cup semi-sweet chocolate chips
Directions:
Preheat oven to 350 degrees. Cover baking sheet with parchment paper, set aside.
In the bowl of a stand mixer, add butter, brown sugar, & sugar and beat together until fully incorporated. Add in pumpkin & vanilla and beat until fully incorporated.
In a medium sized bowl whisk together the flour, salt, baking soda, cinnamon, & pumpkin pie spice. Gradually add it in to the butter mixture and beat until just incorporated.
Remove the bowl from the stand and stir in the chocolate chips.
Using a small cookie scoop, scoop balls of dough onto prepared baking sheet placing them approximately 2 inches apart. Bake for 12-15 minutes until tops are set and cookies are puffy and golden brown.
Let set on the baking sheet for a couple of minutes and then transfer to a cookie sheet to cool completely. Store in an airtight container.
Notes:
*Instead of pumpkin pie spice you can use 1/4 tsp. ginger, 1/8 tsp. nutmeg, & 1/8 tsp. cloves
