As I mentioned on Tuesday, I’m crazy for Mexican food and am always looking for delicious new recipes that satisfy those flavor cravings. This chicken & black bean enchilada skillet was super flavorful, quick, & easy to make. This is definitely going to be a weeknight staple in our household! I served this with tortilla chips on the side for dipping and I love that you can customize it with your favorite Mexican toppings. I also used the homemade enchilada sauce in this recipe and it worked fabulously!
Chicken & Black Bean Enchilada Skillet

Ingredients:
8 (6-8″) corn tortillas, cut into bite sized strips
3 cups cooked & shredded chicken
1 medium onion, chopped
1 clove minced garlic
1 (10 oz.) can diced tomatoes with green chiles (Rotel), undrained
1 (10 oz.) can enchilada sauce or homemade
1 (15 oz.) can black beans, drained & rinsed
1/2 tsp. cumin
1/2 tsp. garlic powder
1 cup shredded cheddar cheese, divided
Tortilla chips, sour cream, & guacamole for serving
Directions:
Spray a large skillet with cooking spray. Heat over medium high heat.
Add the tortilla strips, chicken and onions to the skillet and cook for approximately 5 minutes, stirring often. Once onions are translucent, add in garlic and cook for 30 seconds more.
Meanwhile, in a large bowl stir together the diced tomatoes with green chiles, enchilada sauce, black beans, cumin, & garlic powder. Add to the chicken mixture and stir to incorporate.
Add half of the cheese on top of the mixture. Cover skillet with a lid and cook for approximately 5-7 minutes, stirring occasionally, until most of the liquid has evaporated.
Top with remaining cheese and serve with desired toppings (sour cream, guacamole, taco sauce, cilantro, etc.)
