Have you ever had to entertain in a flash? Last week my husband forgot to mention that some friends were coming over Friday night, so I had to scramble and whip up some kind of entertaining food with about one hour of notice. Panicked, I scanned my kitchen for supplies. Luckily, I had a bag of frozen waffle fries, so I whipped up a dip featuring my favorite of all dip flavors, ranch dressing. I tossed in the veggies I had on hand and threw in some sour cream to thin out the flavor. Finally I topped the dip with cracked pepper and voila! I had a yummy, savory dip, perfect for four people.
Our friends arrived bringing a few other little snacks, and we ended up having a wonderful evening. This dip was a complete success; my husband LOVED it and my guests totally thought I had been planning the dish for days. This dip, and variations of it, will probably be a new “old faithful” recipe for when I need an appetizer or snack for a group. It will likely be making a few more appearances in the house come football season!
I’ve only started brainstorming more ways to vary the recipe, perhaps with some green peppers or a few sprinkles of Mexican chili powder. There are probably a million delicious possibilities that could be made with a ranch dressing and sour cream base. Leave a comment and let us know what you think would be a good mix in.
Caramelized Onion and Roasted Red Pepper Dip
Ingredients
- 2 cups ranch dressing*
- ½ cup diced yellow onion, caramelized
- ¼ cup diced roasted red peppers
- ¼ cup sour cream*
- About a teaspoon of cracked black pepper
*I used low-fat versions of both the ranch dressing and sour cream. While the full-fat versions are probably a little more delicious, the calories/fat in them can add up fast. We were perfectly content with low-fat dressing and low-fat sour cream.
Directions
- Stir together all ingredients. Chill at least 1 hour before serving.
- Serve with regular French fries or sweet potato fries. Save time and use Alexia Waffle Cut Fries, or Sweet Potato Fries, prepared according to package instructions.
