This is a recipe way back from the archives. It was one of the first recipes that I posted and since it’s so great I thought some updated pictures were in order. And since only like 5 people read my blog back then, I thought some of you might want to check it out, haha! This salsa is great and super easy as you just throw every thing in the blender and you’re done! It really does taste just like restaurant salsa and is great with chips or served atop quesadillas or tacos. Perfect for Cinco de Mayo coming up in a few weeks!
Copycat Chili’s Salsa

Ingredients:
1 (28 oz.) can whole tomatoes
1 can Rotel (original blend)
1/2 medium onion, quartered
1-2 jalapenos, quartered and seeded
3/4 tsp. garlic powder
1/2 tsp. ground cumin
1/2 tsp. kosher salt
2 tbsp. cilantro (optional)
Directions:
Add onions & jalapenos to food processor or blender. Pulse 2 or 3 times to roughly chop ingredients.
Add in all other ingredients and pulse for a few seconds until desired consistency is reached. Taste and add in more salt if necessary. Refrigerate for at least 30 minutes for flavors to marry. Store in an airtight container in the refrigerator.
