Hope everyone has a safe and happy 4th of July! It’s forecast for major major rain where I live, but we are still going to a cookout with our friends and even with the rain, I’m looking forward to a day off. I’m taking this Classic Pasta Salad (pictured below) to our cookout and super excited to hang out with our friends. What are your plans to celebrate the Fourth?
Another great recipe that’s super easy and doesn’t take much effort that you could do at the last minute for the Fourth is this Busy Day Cobbler. I originally used mango, but you can sub any fruit you have on hand. And sorry for the crummy picture, I need to remake this and retake the picture.
And one of my favorite desserts from last summer that’s sure to be a big hit at any 4th of July Party were these Peach Pie Crumb Bars

Happy 4th of July…. Will definately be making those peach crumb bars. They look awesome! Peaches are on sale everywhere and are so sweet this time of the year. My fav thing of yesterday (food wise) was potato salad. I made it with a ton of fresh & dried herbes (parsley, oregano,dill, herbes de provence) and used sour cream & dijon mustard instead of mayo – really gave it a nice twist. In the past I only used mayo & yellow mustard. This felt like a more refined taste side dish.
