Chocolate PB Frozen Banana Bites

Hope you all had a great weekend! I don’t know about you, but I need a sweet treat pretty much every evening after dinner. I try to keep it on the lighter side with my latest obsession being popcorn with a little bit of mini chocolate chips stirred in. I do like to mix it up though and I remembered these frozen banana bites I had seen a while back. They are a great sweet treat and the frozen banana tastes like ice cream-even better!! You can customize this by adding any of your favorite toppings. I rolled with chopped pecans, toasted coconut and just the plain chocolate. I also opted to add in some Peanut Butter because, let’s face it, Peanut Butter just makes everything better!:) These would be great for a summer cookout, kid’s birthday party or just an after school (or work) snack. Chocolate Peanut Butter Frozen Banana Bites

Ingredients:
2 cups semi-sweet chocolate chips
2 tablespoons canola oil
Assorted toppings for coating bananas (such as crushed chocolate sandwich cookies, toffee bits, chopped candy bars, chopped pecans, or toasted shredded sweetened coconut)
3 ripe bananas, peeled, cut into 1/2-inch-thick slices
Optional: 1/2 cup natural peanut butter

Directions:
In a small saucepan heat chocolate chips and canola oil over low heat until chocolate is melted and glossy looking. If desired, add peanut butter to melted chocolate and stir until combined. Remove pan from heat and allow chocolate mixture to stand for 15 minutes to cool.

Meanwhile, line a baking sheet that will fit in your freezer with foil. Cut bananas into 1/2 inch slices and arrange on foil. Place toppings in separate shallow bowls ready for dipping.

Take 1 banana slice and using your fingers, dip the banana in the chocolate, coating fully. Shake off excess chocolate and roll dipped banana in desired topping. Place banana slice on baking sheet and with your clean hand sprinkle with a little additional topping. Repeat with all remaining bananas and toppings. Freeze for approximately 3 hours. Remove from freezer and serve. (Store extras in a zippered bag in the freezer and pull out one or two whenever the craving strikes).

  4. Those look amazing….I agree with anonymous I love eating a banana that way! But I also think I will LOVE eating it frozen with peanut butter! 🙂 This seems like a great summer treat!
