Ingredients:
1 3/4 cups white wheat flour *
2 Tablespoons light brown sugar, packed
2 teaspoons baking powder
1/2 teaspoon baking soda
1/4 teaspoon salt
1 large egg
1 1/2 cups buttermilk
3 Tablespoons canola oil
chocolate chips
Directions:
In a medium bowl, whisk together flour, baking powder, baking soda & salt, set aside.
In a large bowl, whisk together egg, brown sugar, buttermilk & oil. Once whisked together stir in the flour mixture just until moistened (batter will be lumpy).
Heat skillet or griddle over medium heat & spray with cooking spray. Using 1/4-1/3 cup measuring cup or ice cream scoop, scoop a spoonful of batter onto skillet or griddle , spread into a circle and top with chocolate chips. (I also think it would work well to fold the chocolate chips into the batter if everyone wants chocolate chips).
*Edited 4.28.12 It originally called for whole wheat flour but I’ve found it works better with white-wheat flour
