Recently, we had an opening ceremonies party for the olympics, much like this one we had for the last summer olympics, where everyone had to bring a dish from another country. I had gone to our new Earth Fare grocery and been given a sample of guacamole and it was so good! And as a bonus they were handing out the recipe! So I decided to make that for our party. I have made this easy guacamole before, but never fully from scratch. This one was so fresh, delicious and addicting! Definitely my new go-to guacamole. Plus it took no time at all to make. Great for a party or a topping for your mexican meal.
Fresh from Scratch Guacamole

Ingredients:
2 medium sized ripe avacados
2 tbsp. fresh lime juice
1 to 2 cloves garlic, minced
1/2 tsp. salt (or more to taste)
1 medium tomato, diced
1/2 medium onion, diced
1 tbsp. cilantro, chopped (or more to taste)
Directions:
Place lime juice in medium sized bowl.
Spoon avacado out of it’s skin and add into the lime juice bowl and mash until desired consistency.
Stir in remaining ingredients. Cover tightly and chill until serving time.
I LOVE fresh guacamole. And I love that you had an opening ceremonies party, that's a great idea!
This recipe looks very similar to one I made from Alton Brown (it's actually scheduled to post tomorrow!) – I LOVED it! I realized that I really like onions and tomatoes in guac. Great idea to have an Olympics party!
