It’s that time of year again to start planning your Thanksgiving menus. Here’s mine from last year. I will also be updating the sidebar this week with some Turkey Day favorites for you to check out. This is a great Thanksgiving dessert to accompany the traditional pumpkin and pecan pies. I actually made this last year for Thanksgiving and everyone liked it so much, my mom asked me to make it again for Christmas. This was so delicious and fresh and I know it will be on our holiday menus for years to come. This recipe came from Good Things Catered, one of my favorite blogs.
Fresh Cranberry and Apple Crunch
Source: Good Things Catered
Ingredients:
2 c. fresh cranberries
2 large apples, cored and diced
2 Tbsp juice of an orange
3 Tbsp granulated sugar
1 c. oats
1/2 c. brown sugar
1/4 c. whole wheat flour
1 pinch cinnamon
8 Tbsp butter (1 stick), chilled
Directions:
Preheat oven to 375 degrees and spray an 8×8 baking dish with baking spray.
In medium bowl combine cranberries, apples, orange juice, sugar and stir to combine.
Spread fruit mixture evenly in baking dish.
In medium bowl, combine oats, brown sugar, and cinnamon.
Cut butter into small pieces and add to dry ingredients.
With pastry blender, cut butter into dry ingredients until all butter is about the size of peas.
Sprinkle this mixture evenly over fruit.
Place baking dish in oven and bake for 45 minutes or until apples have cooked down and begun to caramelize.
Remove from oven and let cool for 10 minutes before serving.

Mmm, this looks fantastic! I haven't seen fresh cranberries at the store yet, but I'm hoping to score some soon!
Fresh cranberries are so wonderful. We buy 'em up in November and freeze 'em and put them in baked goods year round!
