When I saw these mini buffalo chicken sandwiches on Pennies on a Platter, I thought they were super cute! On Memorial Day, I knew I just wanted to take it easy and hang out with Adam, so I planned to make these for a quick and easy dinner. These were really good and would also be perfect for a party. I halved this recipe since it was just me & Adam, but the full recipe is below.
Buffalo Chicken Minis
Source: Pennies on a Platter
Ingredients:
1 Rotisserie Chicken from Grocery Store or 4 chicken breasts, baked & shredded
3/4 to 1 cup Buffalo Hot Sauce
1/4 to 1/2 cup water
16 mini-buns (I used a refrigerated french loaf, sliced it into rolls and cut in half)
Optional: Ranch Dressing for Topping
Directions:
Shred up cooked chicken in medium sauce pan and combine with hot sauce and water. Cook on medium heat until heated through. Add more hot sauce to taste. Serve on mini-buns of choice. Top with a dollop of ranch dressing if desired.
