This past weekend we had our Sunday School class over to watch the super bowl. Unfortunately our Titans didn’t make it, even though they had an amazing season. However, that didn’t stop us from wearing our Titans gear. Nor did it stop us from putting out our Titans flag and the Titans towels they gave out at the playoff game we went too (pictured below with the guacamole-who needs a terrible towel when you have a Titans towel!!!) Okay, sorry I just had to have a moment for the Titans-on to the guacamole.
I wanted to make something that didn’t take very long to make, but would be a big hit with the crowd. I immediately thought of this guacamole. My friends Jill & John made this for us when they threw our couples shower before we got married. I had hated guacamole until I tried this, and I could seriously eat the entire bowl myself. I am not kidding. It is so good and has just the right balance of flavors. I know some of you might be a little leary because it uses a packet and not fresh pico, but trust me, you won’t regret it-plus you don’t have to do all that chopping. And I promise it tastes really fresh, you would never know it started from a packet mix. This guacamole is really easy to double for a big crowd or halve just for two. Enjoy!
Quick & Easy Guacamole
Ingredients:
4 Avocados
1 packet guacamole mix
juice of 1/2 lime
salt & pepper to taste
Directions:
Cut avocados in half. Remove pit. Spoon out the flesh of the avocados. Mash avocados until creamy and just a bit chunky. Add in guacamole mix. Squeeze lime over mixture. Add salt & pepper. Stir until combined. Cover and refrigerate for at least thirty minutes to allow flavors to marry.
I’ve used that mix in a pinch before and it’s actually quite tasty. Yours looks great.
