This is another appetizer I served at our Super Bowl Party this past weekend. We volunteered on Saturday to host the party after one of our friend’s children became sick. We were excited and happy to host, but realized that not that many people had signed up to bring appetizers, but mostly desserts. So Sunday morning, Adam & I were standing in the middle of Wal-mart racking our brains trying figure out an extra appetizer to make that would be quick and not cost much. We made our way through the chicken nuggets, sandwich trays, pizza rolls, lil’ smokies, etc.
Then I remembered seeing Aloha Pizza Squares on Joelen’s Culinary Adventures and the lightbulb went off. I had almost everything to make them, and they would be the perfect little bite. Instead of making them aloha, I omitted the pineapple and just went with the barbecue chicken. I also added bacon and onions-just like my favorite Papa John’s Pizza-Barbecue Chicken & Bacon. The pizza was a big hit and took no time to prepare. I went back in to get a second square and they were all gone.
Barbecue Chicken & Bacon Pizza
Ingredients:
1 package refrigerated thin crust pizza dough
2 chicken breast, baked & slightly shredded
1/2 cup BBQ sauce (I prefer a smoked honey bbq sauce for pizza)
2 cups Shredded Mozzarella cheese &/or Mexican cheese blend
Crumbled Bacon (I used the Real Bacon crumbles from a can)
1/4 onion, chopped
Directions:
Roll out pizza dough into a rectangle. Spoon bbq sauce over dough. Sprinkle bacon, onions, and chicken evenly over top. Cover with cheese. Bake according to the pizza dough package directions.
