
Tuna Pasta Salad
Ingredients:
1 can tuna packed in water, drained
2-2 1/2 cups elbow macaroni noodles
1/4 cup chopped carrots
1/4 cup chopped celery
2 eggs, boiled, peeled and chopped
2 tbsp. fat free mayonnaise
Directions:
Place egg in water and bring to boil. Add macaroni noodles to water and boil according to package directions. Drain pasta and eggs and place pasta in medium sized bowl. Peel and chop eggs and add to macaroni noodles. Add tuna, carrots, celery, mayo, and salt & pepper to taste. Stir together and serve with whole wheat crackers.
I should try this – we usually have all of those ingredients on hand. I like the addition of egg. I think my DH would really enjoy something like this, too.

My husband requests a couple of things that I don’t want to make either!! This does look easy and I love pasta too!
Delete the carrots and add cabbage and you have my dad’s tuna salad, which I loved sooooo much all my life. Ah, the simple pleasures. 🙂
