My husband was out of town the other night, and I was in a baking mood. I looked through several cookbooks and couldn’t figure out what to make. I didn’t want to go to the store, so it had to use ingredients I had on hand. Then I remembered that I came across these on a recipe search not long ago, and thought they would be a perfect thing to try and they could easily transport to treat my coworkers and family. I did eat one though, even though I’m trying to be super healthy. I had to make sure they were edible, right?!? They are super delicious! Be ready with a glass of milk, though because they are rich. Here’s the recipe from Martha Stewart’s website. I made a few substitutions-egg substitute instead of a real egg, light margarine, & lowfat peanut butter. Next time I might also sub more light margarine for the shortening to make it a little lower in fat. I thought they might be good sprinkled with powdered sugar as well.
The batter has a chocolate mousse look to it.
I used my mini cookie scoop to drop them on the baking sheet. I love that thing! It makes everything so uniform and easy. Plus my hands don’t get all messy!
They turned out great! It has a devils food cake feel to it, which I love!
That combined with the peanut butter filling is a perfect pair!

The finished product! Everyone so far has raved about them! Also, the recipe says to let them get to room temperature if you store and refrigerate, but my husband couldn’t wait and said they are great cold too!
