Need a quick & easy appetizer for the Super Bowl this weekend? Then look no further! This dip was so full of flavor and super addictive! Plus, it uses pantry staples and comes together in a flash! I took it to my girls night and we ate the leftovers with quesadillas the next day.
Hot Black Bean & Corn Dip

Ingredients:
1 (15 oz.) can yellow corn, drained
1 (15 oz.) can black beans, drained & rinsed
1 (10 oz.) can rotel (diced tomatoes with green chiles), drained
1 (8 oz.) 1/3 less fat cream cheese, softened & diced
1 tsp. chili powder
1/2 tsp. garlic powder
1/2 tsp. cumin
pinch ground cayenne pepper
1 cup shredded Mexican blend cheese, divided
Directions:
Preheat oven to 350 degrees.
In a medium sized bowl, add the corn, black beans, rotel, cream cheese, chili powder, garlic powder, cumin, cayenne, & 1/2 cup shredded cheese. Stir together to incorporate.
Pour into a 2 quart baking dish and spread evenly. Top with remaining 1/2 cup shredded cheese.
Bake for approximately 25 to 30 minutes, until cheese has melted and mixture is bubbly.

have you ever tried reheating, if so what temp and for how long. trying to make it before work (likely 5-6 hours) and then maybe reheat at the party?
I have reheated the leftovers in the microwave or you could bake at a low temp, like 250 to warm it up. Or you could just assembled everything in the dish & refrigerate it and bake it off right before the party? Hope that helps!
When you say 1 (8oz) 1/3 less fat cream cheese, is that a typo? Do you mean 1/2 less fat?
You can either use regular cream cheese or the 1/3 less fat cream cheese
