Monster Cookies
Source: My friend Tracy
Ingredients:
1/2 cup butter or margarine
1 cup sugar
1 cup + 2 tbsp. packed brown sugar (I used light brown)
3 eggs (I used 3/4 cup egg substitute)
2 cups peanut butter (I used low fat)
3/4 tsp. light corn syrup
1/4 tsp. vanilla
4 1/2 cups uncooked minute oats (next time I think I will try just 4 cups-a little too much oatmeal)
2 tsp. baking soda
1/4 tsp. salt
1 cup M&Ms
1 6oz. package semi sweet chocolate chips
Directions:
Cream butter with sugars. Add eggs, peanut butter, corn syrup, vanilla, salt & baking soda. Mix well. Add oats & mix into batter. Stir in M&Ms & Chocolate chips. Roll into large balls (I used a regular sized ice cream scoop so it wasn’t so messy). Place on cookie sheet & press into circle. Bake at 350 degrees for 12-15 minutes (watch closely). Then experience the warm gooey chocolatey goodness!! (After cooling on a rack first, of course)
Oh, by the way, this recipe makes 3 dozen. So I wrapped them up and gave them to friends and family and then froze the rest to give to my bible study girls tonight when they come over. So, if you don’t need/want that many cookies, cut the recipe in half.

I have been making these cookies for several years. I love them!! I will say that they never turn out the same though. Doesn’t stop me from eating them though.

Seeing these brought back memories. I used to make these with my friend and her mom when I was in grade school. They are delicious!!!
